This bitters based riff on the classic Piña Colada is complex yet surprisingly balanced. The Angostura Colada uses a whole ounce and a half of bitters, hence the name. When combined with lime juice and smooth overproof rum the intensity of bitters is balanced out, while the addition pineapple juice and cream of coconut holds the colada variation true to the tropical classic. Colada riffs abound for a good reason, the rich and sweet formula of rum, pineapple juice, and cream of coconut plays well with more intense, bitter, and smoky flavors, without any one flavor overpowering another. This Angostura bitters variation was created by Zac Overman of Fort Defiance in Brooklyn, New York where it quickly became a favorite at the Red Hook café’s weekly tiki night.
