The Aviation is a classic cocktail from pre-Prohibition days. Like the Airmail cocktail, its name is reminiscent of the boom in aviation of the time. It is most recognizable for its shocking purple hue. Since the ingredient that gives it its stunning color is hard to come by, it can be omitted. In this case, lemon juice is increased to .75 oz.
