Bartender Todd Smith created the Black Manhattan in 2005 at San Francisco’s bar Bourbon and Branch. In this variation on the classic Manhattan, sweet vermouth is swapped out for bittersweet Averna amaro and orange bitters are added. These adjustments made by Smith produce a deeper and more complex Manhattan, with herbal and bitter notes from the amaro.
