Clover Club Gin Dry Vermouth Lemon Juice Raspberries Shaken Cocktail

This striking drink predates Prohibition and is named for the Philadelphia men’s club, the Clover Club. The cocktail’s recipe was first recorded in 1908 in J.A. Grohusko’s Jack’s Manual. It appears under the name the Clover Leaf, however the recipe is identical to the modern version.

The Pink Lady is a simplified gin cocktail of a similar shade. It does not include raspberries like the Clove Club does, but rather gets its hue from grenadine.

Ingredients

1.5 oz GIN, Preferably a mild gin like Plymouth
.5 oz DRY VERMOUTH
.5 oz LEMON JUICE, Fresh is best
.5 oz SIMPLE SYRUP
1 whole EGG WHITE, Or a .5 oz of aquafaba
4 whole RASPBERRIES
