Old Cuban Cocktail With Rum Mint Lime Juice Simple Syrup Bitters And Champagne

This rum-based cocktail was created by famed New York City bartender, Audrey Saunders in 2001. The Old Cuban is one of Saunders’s great cocktails that predate her Pegu Club days, back when the cocktail renaissance was just beginning. Inspired by the Mojito, it builds off its rum, lime juice and mint base and combines it with bitters and champagne. Most importantly Saunders employs aged rum instead of white rum for a more elevated and rich rum cocktail.

Ingredients

6 whole MINT SPRIG, leaves
.75 oz LIME JUICE, Freshly squeezed
1 oz SIMPLE SYRUP
1.5 oz RUM, Aged
2 dash(es) BITTERS, Angostura
2 oz CHAMPAGNE, To top
