Tseng’s recipe offers a sophisticated alternative to most modern Wassail recipes. Many calling for apple cider, orange juice, and pineapple juice, which create a sugary sweet punch.

2 whole APPLE, Scored, preferably Fuji or honey crisp
6 cups ALE, Such as Sam Smith brown ale
4 oz SHERRY, Preferably oloroso
1 tsp LEMON, zest
2 whole CINNAMON, sticks
1/2 cups BROWN SUGAR
1 whole ORANGE, Long peel studded with cloves
10-12 slice(s) APPLE, Fuji or honey crisp
1 tsp NUTMEG, Freshly grated
