The Gaelic Flip belongs to a family of drinks that uses the whole egg, along with a spirit and some kind of sweetener, these are called Flips. This cocktail is made with Irish whiskey, sweet vermouth and a mix of allspice liqueur and simple syrup for sweetness. It was created by Chicago bartender Charles Joly\u2014the founder of Crafthouse Cocktails, a line of bottled cocktails. The result is a foamy, rich and silky drink that, when made right, is as ethereal to look at as it is to drink.<\/h2>\n\n\n\n

For an authentically Irish Gaelic Flip you’ll need an Irish whiskey. Keep in mind you’ll be covering it with allspice and egg whites, so you don’t want to waste a nice bottle on something that’s going to get mellowed out, anyway. Instead, save your good stuff for the spirit forward Tipperary<\/a> or Dubliner<\/a>.
