In this variation of an Old Fashioned by Allen Katz, one of the co-founders of New York Distilling Company, a unique twist is made not only to the choice of base spirit but also to the sweetening agent. The Maple Old Fashioned, as the name implies, replaces the more customary simple syrup (or sugar cube) with the renowned export of Canada: maple syrup. Opting for an aged rum in your Old Fashioned yields remarkable results. Similar to bourbon, the rum undergoes the aging process in a barrel, which imparts a smoother texture, delicate hints of vanilla and caramel, and an enhanced depth and complexity. These characteristics beautifully complement the addition of bitters, a touch of sweetener, and orange zest, resulting in a truly delightful concoction.
