Famous for containing no Curaçao, the Tommy’s Margarita is a straight forward twist on the classic Marg. What is now considered a modern classic was the brain child of Julio Bermejo, who started serving the cocktail while at Tommy’s Mexican Restaurant in San Francisco, CA in the 1980s. It is a simple concoction of tequila, lime juice, and agave syrup, served on the rocks.
The key to making a great Tommy’s Margarita is freshly squeezed lime juice, agave instead of simple syrup, and a quality tequila. Tommy’s version changed the world’s view of what a Margarita could be, which was a less sugary slushy mixed drink that showcased the tequila instead of covering it up. By the 1990s his family’s restaurant had become the epicenter of the tequila revival, serving over 100 different tequilas, all 100% agave.
